50-60 ml milk
113 g (1 stick) unsalted butter
110 g granulated sugar
200 ml strawberry kefir
580 g all-purpose flour
10 g active dry yeast
1 tsp salt
3 eggs, room temperature

2 tbsp (~22 g) melted butter
1/4 cup (50 g) brown sugar
1/8 cup (30 g) granulated sugar
1/2 tsp cinnamon
For the Topping:
Pureed fresh strawberries or strawberry jam

Stand mixer with hook attachment
Small saucepan

Sharp knife or bench scraper
4-inch baking pans (or muffin tins)

Directions
Step 1: Make the Dough
In a small pot, combine milk, butter, and granulated sugar. Warm over medium heat until the butter melts. Set aside to cool slightly.
In the bowl of a stand mixer fitted with the hook attachment, combine strawberry kefir, flour, yeast, salt, and eggs. Mix on the lowest speed just until combined.

Preheat your oven to 175°F, then turn it off. Transfer the dough to a greased bowl, cover with plastic wrap and a towel, and let it rise in the warm oven (or any warm, dark place) for 1.5 to 2 hours, or until doubled in size.
Step 2: Prepare the Filling
While the dough rises, whisk together brown sugar, granulated sugar, and cinnamon in a small bowl. Set aside.
Step 3: Shape the Buns
Once the dough has risen, roll it out into a rectangle about 1/4 inch thick on a floured surface.
Brush the melted butter evenly over the dough, then sprinkle the cinnamon-sugar mixture on top.
Slice the dough into 2-inch wide strips, then slice each strip in half, leaving the top end intact.
Twist each strip into a tight rope, then roll the rope into a rose shape, tucking the end underneath. Repeat for all strips.
Place each bun into a greased 4-inch baking pan. Cover with plastic wrap and a towel, and let rise in a warm oven for 30 minutes.
